TA35+ stands for Total Activity [TA] followed by the number rating the honey receives on a scaled level of activity, which represents the honey's antimicrobial quality. The higher the TA score, the greater the antimicrobial strength- honey rated TA10+ will have beneficial properties, and ratings of TA30+ possess the reknowned medicinal qualities.

In order to retain these qualities, the honey should be unheated- eating it on toast or off the spoon is fine but putting it in tea will kill the desired bio-activity.
